Black Cod is an excellent candidate for smoking, because its fat content helps prevent it from drying out.  Black Cod has a rich, buttery flavor and a smooth, silky texture. It’s fattier than Pacific Cod and Halibut, with a more luxurious texture, but milder than Salmon and Tuna.
